About Sambar Masala
Roasted dal is what separates a Tamil sambar powder from the North Indian article. It goes in whole, roasted until it smells nutty, and it does the thickening.
Coriander leads, dal follows, chilli is third. That order matters — a chilli-first sambar powder is a kulambu powder wearing the wrong label.
Enough asafoetida to notice, which in a sambar is the point.
Ingredients
Everything that goes in, and nothing that does not. No preservatives, no chemicals, no added colour.
- Coriander seed
- Toor dal
- Bengal gram
- Dried red chilli
- Fenugreek
- Jeera
- Turmeric
Ground in a facility that also handles wheat, groundnut, sesame and tree nuts.
How to use
Two heaped teaspoons per four servings.
Add once the vegetables are soft and the dal is mashed in.

Thickens on its own
The roasted dal in the blend does what it claims — I have stopped adding extra dal to the sambar entirely. Tastes like the sambar in a proper mess, not like a restaurant.
Asafoetida is generous
You can actually taste the perungayam, which is rare. I use two teaspoons for a family of five and it is plenty.
