About Kulambu Masala
A kulambu is boiled down for half an hour. A blend that tastes good raw will taste of nothing by then, so this one is weighted towards the spices that survive: coriander, fenugreek, dried chilli.
Fenugreek is the signature and the easiest thing to overdo. It is measured to a quarter of what a general-purpose masala would carry.
Not a sambar powder. It has no dal in it and will not thicken.
Ingredients
Everything that goes in, and nothing that does not. No preservatives, no chemicals, no added colour.
- Coriander seed
- Dried red chilli
- Fenugreek
- Black pepper
- Cumin
- Mustard
- Curry leaf
- Asafoetida
- Turmeric
Ground in a facility that also handles wheat, groundnut, sesame and tree nuts.
How to use
Two teaspoons per four servings, added to the tamarind extract.
Boil at least twenty minutes — this blend is designed for it.

Holds up to a long boil
Vathakulambu needs to reduce for half an hour and most masalas taste of nothing by then. This one still has character. Fenugreek is restrained, which I appreciate.
