About Coriander Powder
Coriander is the bulk of most South Indian gravies, which means a bad one is not a small mistake. Roasted low for twenty minutes — long enough to dry the seed through, short enough that the outer husk never scorches.
It thickens a gravy as much as it flavours one. That body is the seed, not added starch.
Buy it in the size you will finish in three months. It fades faster than chilli.
Ingredients
Everything that goes in, and nothing that does not. No preservatives, no chemicals, no added colour.
- Coriander seed
Ground in a facility that also handles wheat, groundnut, sesame and tree nuts.
How to use
Two parts coriander to one part chilli is the standard kulambu base.
Fry in oil until the raw smell lifts before adding liquid.

Thickens without any starch
I used to add a spoon of besan to my kulambu for body. Do not need to any more. The seed is doing it.
