About Wheat Flour
Lokwan wheat, ground whole on stone. Nothing is sieved out afterwards, so the bran and the germ are both still in the bag — which is what atta is supposed to mean and frequently does not.
Stone mills run slow and cool. Roller mills run hot enough to oxidise the germ oil, which is why roller atta keeps longer and tastes of less.
It will absorb more water than the flour you are used to. Add it gradually.
Ingredients
Everything that goes in, and nothing that does not. No preservatives, no chemicals, no added colour.
- Whole Lokwan wheat
Ground in a facility that also handles wheat, groundnut, sesame and tree nuts.
How to use
Roughly 70ml water per 100g flour, but go by feel.
Rest the dough twenty minutes before rolling.

Chapatis stay soft the next day
I have bought from this mill in person for eleven years and the online flour is the same flour, which I was not sure would be true. Takes more water than packet atta. Rest the dough properly.
You can smell the difference on opening
Smells like wheat. Packet atta smells like paper. Only issue is it does not keep as long, but that is the trade you are making and they say so on the page.
Good flour, plan your storage
Three months shelf life on 5kg means you need an airtight container and a cool spot. Worth it, but do not buy the big bag if you make chapati twice a week like I do.
