About Kambu Flour
Kambu carries its bitterness in the outer layer. We hull it before milling rather than after, which costs yield and is the only way to get a flour that does not need masking.
A summer grain in Tamil Nadu and a winter one everywhere else — it is warming, which is why kambu koozh is a hot-weather drink served cold.
Coarser grind than the ragi. Kambu does not want to be fine.
Ingredients
Everything that goes in, and nothing that does not. No preservatives, no chemicals, no added colour.
- Raw pearl millet (kambu)
Ground in a facility that also handles wheat, groundnut, sesame and tree nuts.
How to use
Koozh: cook thin, ferment overnight with buttermilk, serve cold with small onion.
Dosa: blend one part kambu flour into three parts regular batter.

No bitterness at all
Hulling before grinding is clearly the difference. I have had kambu flour that needed buttermilk just to be drinkable. This does not.
