About Idiyappam Mix
The dry-roast is the step that separates a soft idiyappam from a crumbling one, and it is fifteen minutes of standing over a pan stirring constantly. It is already done.
Roasted to the point the flour turns weightless and smells faintly of popcorn — a shade past that and it will not bind.
Add boiling water, not hot water. The distinction matters here more than anywhere else in this catalogue.
Ingredients
Everything that goes in, and nothing that does not. No preservatives, no chemicals, no added colour.
- Parboiled rice (puzhungal arisi)
- Raw White Rice
Ground in a facility that also handles wheat, groundnut, sesame and tree nuts.
How to use
Equal volumes flour and boiling water, mixed with the handle of a spoon.
Knead while hot, press immediately, steam eight minutes.

Saves the worst fifteen minutes
Roasting rice flour by hand is tedious and easy to ruin. This is roasted exactly right. Use boiling water — actually boiling, off the flame that second.
